Biocatalysts enzyme taps into new and growing Halal/Kosher cheese market

Enzyme manufacturer, Biocatalysts, has broadened its microbial dairy enzyme range with a product designed as an alternative to porcine pancreatin, a pig pancreas derivative, for dairy flavour applications.

If any cheese company uses Biocatalysts Enzyme, still cheese will not be consider Halal if other requirements such source of starter culture bacteria is not from animal source but from milk source and most important thing is the Growth Media used to grow these starter culture bacteria if it is not Halal then the Biocatalystes Enzyme cannot determine the Halal status of the cheese because the media is composed of whey and Lactose which has to be Halal. The another ingredient is used is Yeast Extract for nutrition of bacteria if it is from brewer yeast which is a byproduct of beer making then cheese will not Halal unless yeast extract from baker’s yeast. If media is 100% milk then it cheese will be Halal.
